Preparation Method:

One of the most popular dessert in Spain: tocino de cielo.

  1. Put a pot in the fire and pour the water.
  2. Add the sugar and stir it until dissolved.
  3. Keep cooking for other 15 minutes and keep mixing until the liquid becomes a golden caramel.
  4. Remove the pot from the fire and let it cool down.
  5. Beat in a bowl 7 egg whites and 3 eggs.
  6. Add the syrup and beat again.
  7. Pour the mixture in a mould.
  8. Put it in the oven for 60 minutes (200º). Use a water bath.
  9. Take it out and let it cool. When it is cool, put it in the fridge for 2 hours.
  10. Pierce with a knife to see if it is solid.
  11. Take a cake from the mould and serve!
