One of the most popular dessert in Spain: tocino de cielo.
- Put a pot in the fire and pour the water.
- Add the sugar and stir it until dissolved.
- Keep cooking for other 15 minutes and keep mixing until the liquid becomes a golden caramel.
- Remove the pot from the fire and let it cool down.
- Beat in a bowl 7 egg whites and 3 eggs.
- Add the syrup and beat again.
- Pour the mixture in a mould.
- Put it in the oven for 60 minutes (200º). Use a water bath.
- Take it out and let it cool. When it is cool, put it in the fridge for 2 hours.
- Pierce with a knife to see if it is solid.
- Take a cake from the mould and serve!
