Andalusian style mushrooms

Preparation Method

Mushrooms are a food that is widely consumed by the general population. They are as famous as porcini and truffles, but are not as valuable. However, due to their organoleptic and taste characteristics of lightness and delicacy, their ease of use and the relative ease of artificial reproduction, mushrooms are undoubtedly the most cultivated – or rather, bred – type of in Spain. They lend themselves to many different preparations: can be enjoyed fried or baked, but there are many recipes with mushrooms that can be made. They are also often used to flavour sauces or broths, both for vegetables and meat, thus making the preparations tastier.

Let us now follow step by step how to prepare a good recipe for Andalusian-style mushrooms:

  1. Split the mushrooms, separating the stem from the top, wash them well.
  2. Cook them in salted water for 25 minutes. Drain them and put them in a pot.
  3. Sauté the ham with the olive oil and butter.
  4. Add the sofrito, gherkin and chopped parsley to the pan with the shrooms.
  5. Mix all the ingredients together, season with the lemon juice, add the sherry wine and stir, cover the pan and simmer until the wine is almost consumed.
  6. Serve on toasted bread.

  • 1 kilo and a quarter of mushrooms
  • 3 slices of cooked ham
  • 1 tablespoon of olive oil
  • 2 tablespoons of butter
  • 4 cups of amontillado wine
  • 1 chopped gherkin
  • 1 tablespoon of chopped parsley
  • Juice of 1 lemon
  • Toasted bread
  • Salt to taste
