Panellets

Preparation Method

The panellets are a typical sweet of Catalonia, Aragon, Valencia and the Balearic Islands.

  1. Boil the sweet potatoes and when they are tender out of the water, peel and mash until a consistency of a puree.
  2. In a bowl mix the almonds with sugar, add the mashed potatoes and knead until a stiff dough. Let it cool down.
  3. Beat the eggs.
  4. In a bowl place the pine nuts.
  5. Make the dough balls, roll in beaten egg and in the pine nuts .
  6. Preheat oven to 180º.
  7. Place the balls on a baking dish coated aluminum foil.
  8. Leave in the oven until golden brown balls (about 10 minutes). Remove and let them cool.

You can add other ingredients to decorate the balls.

Ingredients

  • 1 kg of raw ground almonds
  • 1 kg of sugar
  • 3 eggs
  • 1 large cup of peeled pine nuts
  • ½ kg of sweet potatoes
