Ricotta, honey and mint cheesecake

Preparation Method

  1. Prepare the egg whites and yolks.
  2. Beat the egg yolks in a bowl. Add the ricotta cheese and sugar. Stir a creamed mixture until integrated.
  3. Beat the egg whites with an electric mixer.
  4. Gently transfer the beaten whites to the bowl with yolks and ricotta cheese.
  5. Add grated lemon zest and stir it.
  6. Preheat the oven to 180°C
  7. Grease the moulde (22 cm) with butter and sprinkle with flour.
  8. Cover the moulde with the mixture and put it in the oven for 45 min.
  9. Take it off and let it cool down.
  10. Decorate the cake with honey and mint leaves.
  11. Serve with your favourite fruit.
