This is the basic recipe for spanish muffins: magdalenas. You can make sweet muffins anytime. Enjoy!
- Preheat oven to 200 degrees.
- Measure a quarter cup of sugar and place it in a bowl.
- Beat the eggs. Add them to the rest of sugar. Mix until a light mixture.
- Melt the butter over medium heat. Add the melted butter to egg and sugar mixture, while stirring. Mix the mixture.
- Add the milk and lemon peel. Mix again.
- Put the flour in a bowl and add the yeast.
- Add flour mixture to the egg mixture slowly, stirring. Mix well until a dense mass.
- Place paper cups in a baking tray. Add the mixture to the molds, filling halfway.
- Sprinkle some sugar over all the muffins.
- Place the tray in the oven for 18-20 minutes, until the muffins are golden brown.
- Remove from the oven and let them cool.
- Serve.
